Salt Spring Vinegar was born when a winemaker (June Simmons) and a farmer (Bree Eagle) got serious about vinegar and the finer points of fermentation. The best vinegar starts with great wine, and great wine needs great fruit. It’s a pretty simple formula and we like to keep things simple.
June Simmons skills as a brewmaster and vintner were the foundation for Salt Spring Vinegar. She is no longer with the team but you can still taste her expertise in our vinegar.
Bree is an Island Girl who grew up growing and selling certified organic produce. Fruit is in her blood; before she caught the vinegar bug she ran a heritage apple nursery.
